I just completed a private cooking demo on Sat 11 Oct 2008, for 12 people in a private home, where I showed them how to make:
(a) lemon cake,
(b) lime muffins;
(c) pecan pie.
Whilst these may not be Cristang cuisine, but they are what people like for festive occassions.

Julian and Marianne made this salsa which can be used as a topping for bruchettas or as a filling for burgers.
Ingredients
1 whole pineapple
1 red onion
7 tomatoes
3 nectarines
10 stalks of corriander (use the leaves only)
Method
Chopped all ingredients into small bits. Keep in fridge pending serving.
When ready to serve, mix ingredients into a large mixing bowl
Drizzle olive oil over mixture
add pepper and salt to taste
squeeze 1 lemon
keep in fridge until ready to eat
The colour of the dish is quite inspiring as the green of the corriander plays against the red of the tomatoes and yellow of the pineapples.

This evening a BBQ is being held prepared by Julian, with the help of his kids and relatives. It is to be the launch of the website www.celines-cuisine.com. 1st October 2008 marks the re-entry into cyberspace. Enjoy.

Today my son, Julian has finally completed my website and published in. Thanks son. The domain name is www.celines-cuisine.com and you can find out about recipes, Cristang peoples and about me, too. This blog is for me to put online my cooking ideas, new recipes and events that I am involved in for those who are interested to read about it.
