(Green Chilli Sambal)


300g fresh green chillies
500g fresh medium prawns
50ml cooking oil

Spice Paste :
100g freshly grated coconut, toasted in a dry pan )
200g shallots, peeled and chopped )
5 buah keras (candlenut), crushed ) Grind to a fine paste
30g belachan/trassi (shrimp paste), lightly toasted )
20g udang kering (dried prawns), presoaked in hot water )

250ml coconut milk
Salt and sugar to taste


1. Slice chillies diagonally and soak in water.
2. Peel prawns. Rinse and rub with salt.
3. Heat the oil in a frying pan or wok and saute the spice paste mixture till fragrant.
4. Pour in the coconut milk and simmer 2 minutes, stirring continuously.
5. Add the sliced chillies and prawns. Simmer 5 minutes until prawns turn pink.
6. Season with salt and sugar to taste. Simmer until the sambal is almost dry.
7. Remove from heat and serve at once with rice or bread.
